SPICY BUFFALO WINGS

(SECRET RECIPE!!!)

HIGH QUALITY CHICKEN WINGS

DAVE’S SECRET BRINE

  • 1 quart buttermilk

  • 1 bottle Frank’s Red Hot

  • 1/2 cup pickle juice

  • 1 T chili powder

  • 3 T salt

  • 2 T black pepper

  • 1 T garlic powder

JAMES’ SECRET SPICY SAUCE

  • 2 sticks salted butter

  • 6 cloves garlic, finely minced

  • 1/3 cup Fanny Mencoboni’s House Blend dressing

  • 1/4 cup apple cider vinegar

  • 4 T brown sugar

  • Secret quantities of:

    • yellow mustard

    • Worcestershire sauce

    • celery salt

    • oregano

    • black pepper

    • garlic powder

    • garlic salt

    • cayenne pepper

    • red pepper flakes

  • 50 oz Frank’s Red Hot (Costco 25 oz Twin-Pack)

DAY BEFORE

  1. NOTE: Prepare the brine and the sauce 24 hours before serving.

  2. FOR THE BRINE: combine all ingredients in a large bowl and whisk. add chicken wings, cover and refrigerate overnight.

  3. FOR THE SAUCE: melt butter in saucepan. add remaining ingredients and use a stick blender until smooth. bring to a low simmer, then turn off the heat and cover for 20 minutes. fully cool and refrigerate overnight.

THE BIG DAY (wing day)

  1. In the morning, remove brined wings from the refrigerator, place on a wire rack and remove all excess brine with paper towels. do not rinse. season lightly with salt on both sides and return to the refrigerator to dry for at least 8 hours.

  2. Preheat the oven to 425 degrees fahrenheit and remove the wings from the refrigerator to come to room temperature.

  3. Bake for 25 minutes.

  4. Remove sauce from refrigerator and heat in a saucepan or in the microwave until warm, but not simmering.

  5. Flip and bake for another 15-20 minutes until skin is crispy and internal temp is 165 degrees fahrenheit.

  6. Remove from oven and rest for 5 minutes before tossing with sauce.

  7. Enjoy! They’re spicy!
